How to recognize the true Quality and Freshness
of Premium and Typical
Extra Virgin Olive Oils
... and spend your money well
1. Open 2 or more bottles of Premium * and Typical * Extra Virgin oils
2. Begin the Tasting Game starting from the Gentle, leaving
the Fruity until last
3. Remove around 100 ml of oil from the bottle at every tasting
to simulate its use
4. Repeat the Game every 10 days for a month**
5. At the end of the 30 days the Premium and Typical oils should
be fresh and good
6. The oils that are still fresh and good have a real “pleasure-wellbeing” value
7. Those that have lost their freshness and goodness have also lost this value
* Premium is the Organic and the Italian.
* Typical is the Dop (Protected Designation of Origin) and the Igp (Protected Geographical Indication) oil
**30 days is the average estimated consumption time for a bottle of Extra Virgin oil
The Tasting Game
1. Pour a soup spoon measure of each type of oil into
the glasses
2. Warm the contents between your hands to raise
the temperature of the oil to over 25°C
3. Bring the glass to within touching distance of your nose
and slowly inhale small amounts of air two or three times
4. There is then a short selection of oils by the nose
to discern the Gentle from the Fruity
5. Small pieces or bread are brushed against the surface
of the oil and eaten
6. Compare the impressions generated from each
to understand which oils are fresh and good
